If you're on an older version of macOS, the shortcut is: Ctrl + Shift + Power (if you do not have an eject button) Ctrl + Shift + Eject (if you have an eject button)
You may need to set up a password when the machine has been put to sleep if you haven't done so already. Follow the instructions here to do so.

Of course, if your co-workers still can't remember to lock their laptops even after learning how simple it is, you can always make them remember with a snipe. We find that publicly announcing they've left their laptop unlocked is a very effective remedy. Do remember that we're ultimately trying to make the workplace safer, so please lock their laptops after you snipe them!
